Eggplant Keto Lasagna Panamá

This was amazing, so if you have the free time try it out.



Ingredients for the #Lasagna:

-6 small eggplants

-1 pound of minced meat

-2 jars of diced tomatoes

- Cream Cheese, Parmesan and #Emmental or whatever cheese you have available but the Cream Cheese is not optional.

-basil salt, pepper, garlic, -1 minced onion - 2 green peppers

Instructions:

1. Preheat the oven to 350F

2. Cut vertically slices of your 6 small slender eggplant, place them on paper towels and throw on them a little bit of salt. Wait 15 min., turn over slices and through a little bit more salt.

3. Cook on the stove garlic, minced onion and green peppers together in a little bit of olive oil or avocado oil.

4. Throw in with your previous mixture on the stove: minced meat, the diced tomatoes, garlic sliced with rest of seasonings.

5. On a baking pan spray with coconut cooking oil, then cover with sliced and salted eggplants.

6. Add in the minced meat (without the liquids) until all eggplants are covered.

7. Take a cup of Cream cheese melt in microwave and cover the minced meat. With a spatula or the back of a spoon smooth out the melted cheese, cover with Emmental, Gouda or mozzarella.
